Ingredients:

500 g chicken (drumsticks or thighs work best)

1 cup buttermilk (or plain yogurt, whisked)

2 tbsp soy sauce

1 tbsp vinegar or lemon juice

1 tbsp ginger-garlic paste

1 tsp chili powder
-
Salt & pepper (to taste)
For Coating:

1 cup all-purpose flour

½ cup cornflour (for extra crispiness)

1 tsp garlic powder
-
1 tsp paprika or chili powder
-
½ tsp black pepper powder
-
Salt (to taste)
For Garlic Sauce (Optional):

2 tbsp butter
-
6–7 garlic cloves (finely chopped)

1 tbsp soy sauce
-
1 tbsp chili sauce (adjust to spice level)

1 tsp honey
Method:

Marinate Chicken:

Mix buttermilk, soy sauce, vinegar, ginger-garlic paste, chili powder, salt, and pepper.

Add chicken, coat well, cover, and refrigerate for at least 2 hours (overnight gives best flavor).

Prepare Coating:

In a bowl, mix flour, cornflour, garlic powder, paprika, pepper, and salt.

Remove chicken from marinade and dredge in flour mixture.

For extra crunch: dip back into marinade and re-coat in flour.

Fry Chicken:

Heat oil in a deep pan.

Fry chicken on medium heat until golden brown and cooked through (about 12–15 mins depending on size).

Drain on paper towels.

Garlic Sauce (Optional):

In a small pan, melt butter and sauté chopped garlic until golden.

Add soy sauce, chili sauce, and honey. Mix well.
